Rheological Properties of Mixtures of Spruce Galactoglucomannans and Konjac Glucomannan or Some Other Polysaccharides

چکیده
Spruce galactoglucomannan is a wood-derived polysaccharide with a modest molar mass that has recently been made available in kg-scale for research and development of value-added products. To promote the application of spruce galactoglucomannans in, for example, food products, it is vital to understand also the rheological behaviour of the mixtures of galactoglucomannans with other polysaccharides. Rheological measurements were applied to study the rheological properties of mixtures of spruce galactoglucomannans and high-molar-mass konjac glucomannan, xanthan, guar gum, locust bean gum, and carrageenan. Shear rate-dependence of viscosity and applicability of the Cox-Merz relationship of mixtures of spruce galactoglucomannans with the other polysaccharides were studied. Spray-dried and ethanol-precipitated galactoglucomannans were also prepared for comparison. The effects of polysaccharide mixture ratio, temperature, ionic strength, and deacetylation are discussed. Mixtures of spray-dried galactogluco-mannans and konjac glucomannan showed lower elastic properties than those of ethanol precipitated galactoglucomannans and konjac glucomannan. The viscoelastic spectra of mixtures of both galactoglucomannans and deacetylated galactoglucomannans with konjac glucomannan showed temperature dependency throughout the cooling process. Ionic strength had an effect on the rheological properties of mixtures of galactoglucomannans with konjac glucomannan. Deacetylation of galactoglucomannans did not affect the viscoelastic spectra significantly.

Effects of Acid and Salt Solutions on the Pasting, Rheology and Texture of Lotus Root Starch–Konjac Glucomannan Mixture
To explore the functional properties of mixed biopolymer systems affected by acid and salts. The effects of acid and salt solutions (i.e., NaCl, KCl and CaCl2) on the pasting, rheology, texture and microstructure of lotus root starch–konjac glucomannan (LRS/KGM) mixtures were assessed. Acid (citric acid buffer) treatment worsened the pasting (except for breakdown viscosity), rheological (except...
متن کاملCharacterisation of water-soluble galactoglucomannans from Norway spruce wood and thermomechanical pulp
Different fractions of water-soluble polysaccharides, all composed mainly of acetyl-galactoglucomannans, from native Norway spruce wood and thermomechanical pulp were isolated and characterised. About 65% of the mannose units in the glucomannan backbone were acetylated at either the C-2 or C-3 positions in a ratio of 2.2:1.0. Mainly the mannose units, but also some glucose units, were also part...
متن کاملDilute Solution Viscometry Studies on a Therapeutic Mixture of Non-digestible Carbohydrates
Recent work has shown the beneficial effects of a proprietary mixture of three non-digestible carbohydrates: konjac glucomannan, xanthan and alginate and these effects have been linked with a synergistic interaction observable with analytical ultracentrifugation, rheological and NMR measurements. These observations have been supported by fundamental dilute solution viscosity studies. Preparatio...
متن کاملStructures of Hemicelluloses and Pectins in Wood and Pulp
This work aims to fill gaps in the present knowledge of the structures of wood polysaccharides of potential importance in mechanical and chemical pulping. The detailed structures of the polysaccharide components from wood that dissolve during mechanical pulping were determined. The structures of polysaccharide components linked to residual lignin in chemical pulp were also determined. Methylati...
متن کاملDeciphering Ligand Specificity of a Clostridium thermocellum Family 35 Carbohydrate Binding Module (CtCBM35) for Gluco- and Galacto- Substituted Mannans and Its Calcium Induced Stability
This study investigated the role of CBM35 from Clostridium thermocellum (CtCBM35) in polysaccharide recognition. CtCBM35 was cloned into pET28a (+) vector with an engineered His6 tag and expressed in Escherichia coli BL21 (DE3) cells. A homogenous 15 kDa protein was purified by immobilized metal ion chromatography (IMAC). Ligand binding analysis of CtCBM35 was carried out by affinity electropho...
